The process of fermentation was done in tandem with of both stationary and rotating fermentation vessels for six days at room temperature. This strikes a compromise between preserving fruit drive and aromatics and extracting the right tannin for the wine's structure. Because they quickly dry up in the summer, sandy soils with varied depths over limestone need to have their water management carefully managed. A balance of light and shade in the canopy is achieved to maximize fruit quality through the use of canopy management techniques and supplemental watering tactics to each unique location.
